1 cup cornbread mix

1/2 cup milk

1 large egg

1 cup cooked sausage, crumbled (preferably spicy or flavored)

1/2 cup diced Hatch green chilies (fresh or canned, mild or hot based on preference)

1/2 cup shredded cheddar cheese

1/4 cup diced red onion

1 tsp garlic powder

1/2 tsp cumin

Salt and pepper to taste

Cooking spray or oil for greasing

Preheat the oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners.

    Combine ingredients: In a large mixing bowl, whisk together the cornbread mix, milk, and egg until smooth.

      Add mix-ins: Fold in the crumbled sausage, diced Hatch chilies, shredded cheddar cheese, diced red onion, garlic powder, cumin, salt, and pepper. Ensure that all ingredients are evenly mixed, but be careful not to overmix.

        Fill muffin tin: Spoon the mixture into the prepared mini muffin tin, filling each cup about 2/3 full.

          Bake: Place in the preheated oven and bake for 15-18 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
