1 cup fresh corn kernels (or frozen, thawed)

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp smoked paprika

1/2 tsp ground cumin

2 large eggs

1/2 cup buttermilk

1 cup roasted Hatch green chiles, peeled and diced (can use canned or frozen if necessary)

1/2 cup shredded sharp cheddar cheese

1/4 cup chopped green onions (optional)

Vegetable oil for frying

Fresh cilantro for garnish (optional)

Sour cream or Greek yogurt for dipping (optional)

Prep the Mixture: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, black pepper, smoked paprika, and ground cumin. Whisk together until well blended.

    Combine Wet Ingredients: In a separate bowl, whisk together the eggs and buttermilk until well combined.

      Combine Ingredients: Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay.
