1 cup shredded cheddar cheese

1 cup Monterey Jack cheese, shredded

1/2 cup black beans, rinsed and drained

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

1 avocado, diced

1/4 cup sour cream

1/4 cup jalapeños, sliced (optional)

Salt and pepper to taste

1 tbsp olive oil

1 tsp cumin

1 tsp garlic powder

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, diced Hatch green chiles, black beans, red onion, cumin, garlic powder, salt, and pepper. Drizzle with olive oil and mix well to incorporate all ingredients.

Build the Nachos: On a large baking sheet, spread out the tortilla chips in an even layer. Top them with the chicken mixture, ensuring it’s evenly distributed.

Add Cheese: Generously sprinkle the shredded cheddar and Monterey Jack cheese over the entire layer of chicken and chips.

Bake: Place the nachos in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

Add Fresh Toppings: Once out of the oven, top the nachos with halved cherry tomatoes, diced avocado, chopped cilantro, and jalapeños, if using.

Serve: Drizzle sour cream over the top or serve it on the side for dipping. Serve hot and enjoy your flavorful Hatch Chili Chicken Nachos!
