1 pound ground beef (preferably grass-fed)

1 cup hatch green chilies, roasted and diced (fresh or canned)

1 cup long-grain white rice

2 cups beef broth

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust to taste)

1 cup corn (frozen or fresh)

1 can (15 oz) diced tomatoes, drained

1/2 cup shredded cheddar cheese (optional for topping)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Heat the Skillet: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent.

    Brown the Beef: Add the ground beef to the skillet. Break it up with a wooden spoon and season with salt, pepper, cumin, smoked paprika, and chili powder. Cook until the beef is browned and no longer pink, about 6-7 minutes.

      Add Garlic and Chilies: Stir in the minced garlic and diced hatch green chilies. Cook for an additional 2 minutes, allowing the garlic to become fragrant.
