Guilt-Free Peanut Butter Cups

1 cup natural peanut butter (no sugar added)

3 tbsp maple syrup or honey

1/2 cup unsweetened cocoa powder

1/4 cup coconut oil, melted

1/4 tsp sea salt

1 tsp vanilla extract

Optional: 1 tbsp crushed nuts or seeds for topping

Instructions
 

Prepare the Molds: Line a muffin tin with cupcake liners or silicone molds. This will make it easier to remove the peanut butter cups once they are set.

    Make the Chocolate Base: In a medium mixing bowl, combine melted coconut oil, cocoa powder, and 1 tablespoon of maple syrup or honey. Whisk together until smooth. This will be the first layer of the peanut butter cups.

      Add the Chocolate Base: Pour a small amount of the chocolate mixture (about 1 tablespoon) into the bottom of each cupcake liner. Use the back of a spoon to spread it evenly across the bottom. Place the muffin tin in the freezer for about 10 minutes to set.

        Prepare the Peanut Butter Filling: In another bowl, mix together the peanut butter, remaining maple syrup or honey, sea salt, and vanilla extract until well combined. The mixture should be creamy and smooth.

          Add the Peanut Butter Layer: Once the chocolate base has set, remove the muffin tin from the freezer. Spoon about 1 tablespoon of the peanut butter mixture on top of the chocolate layer in each cup. Press it down slightly to ensure it's well packed.

            Cover with Remaining Chocolate: Pour the remaining chocolate mixture on top of the peanut butter filling, covering it completely. You can tap the muffin tin on the counter to ensure there are no air pockets.

              Optional Topping: If you desire, sprinkle crushed nuts or seeds on top of the chocolate layer before it sets.

                Chill and Set: Return the muffin tin to the freezer and let it sit for an additional 15-20 minutes, or until the chocolate is completely hardened.

                  Serve and Enjoy: Once set, carefully peel away the liners and enjoy your guilt-free peanut butter cups! Store any leftovers in an airtight container in the fridge.
