4 whole wheat flatbreads

1 cup marinara sauce (or pizza sauce of your choice)

1 cup mozzarella cheese, shredded

1 red bell pepper, sliced thin

1 yellow bell pepper, sliced thin

1 zucchini, sliced into thin rounds

1 cup mushrooms, sliced

1 small red onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat.

    Prepare the Vegetables: In a large bowl, combine the sliced red and yellow bell peppers, zucchini, mushrooms, and red onion. Drizzle with olive oil and sprinkle with garlic powder, dried oregano, dried basil, salt, and pepper. Toss well to coat the veggies evenly.

      Grill the Veggies: Place the seasoned vegetables in a grill basket or on a piece of heavy-duty aluminum foil. Grill for about 8-10 minutes, turning occasionally, until they are slightly charred and tender. Remove from the grill and set aside.

        Assemble the Flatbreads: Lay each flatbread on a clean work surface. Spread a generous amount of marinara sauce evenly over each flatbread, leaving a small border around the edges. Sprinkle shredded mozzarella on top of the sauce.

          Add Grilled Veggies: Distribute the grilled vegetables evenly over the cheesy flatbreads.

            Grill the Pizzas: Carefully transfer the flatbreads to the grill. Close the lid and grill for 5-7 minutes, or until the cheese is melted and bubbly and the bottom of the flatbread is grilled to your desired crispiness.

              Serve: Remove the flatbreads from the grill. If desired, drizzle with balsamic glaze and garnish with fresh basil leaves. Slice and serve immediately.
