Grilled Teriyaki Salmon Skewers

Ingredients
  

1 lb fresh salmon fillet, skinless and cut into 1-inch cubes

½ cup teriyaki sauce (store-bought or homemade)

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

Salt and pepper to taste

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

1 cup cherry tomatoes

Fresh cilantro or sesame seeds for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Marinate the Salmon: In a bowl, whisk together the teriyaki sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, salt, and pepper. Reserve ¼ cup of the marinade for basting later. Add the salmon cubes to the bowl, making sure they’re well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Vegetables: While the salmon marinates, wash and cut the bell peppers, onion, and cherry tomatoes into appropriate sizes for skewering. This allows for even cooking and a beautiful presentation.

      Assemble the Skewers: Once the salmon has marinated, alternate threading the salmon cubes and the assorted vegetables onto the skewers. You can pick any order you like for a colorful presentation, but a good sequence is salmon, red bell pepper, onion, green bell pepper, and cherry tomato.

        Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates with a little oil to prevent sticking.

          Grill the Skewers: Place the skewers on the grill. Cook for about 2-3 minutes on each side, brushing with the reserved marinade every time you flip them. Be careful not to overcook the salmon; it should be tender and flaky.

            Serve: Once cooked, carefully remove the skewers from the grill. Transfer them to a serving plate and garnish with fresh cilantro or sprinkle with sesame seeds for an extra touch.
