Grilled Sweet Corn & Avocado Salad

Ingredients
  

4 medium ears of sweet corn, husked

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup cilantro, chopped

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon honey (optional)

Salt and black pepper to taste

1/2 teaspoon chili powder (optional for a kick)

Instructions
 

Preheat the Grill: Preheat your grill to medium-high heat, about 400°F (200°C).

    Grill the Corn: Place the husked ears of corn directly on the grill. Grill for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through. Once done, remove from the grill and let cool slightly.

      Prepare Vegetables: While the corn cools, prepare the other salad ingredients. In a large bowl, combine the diced avocados, halved cherry tomatoes, chopped red onion, and chopped cilantro.

        Cut the Corn: Once the grilled corn is cool enough to handle, cut the kernels off the cob and add them to the salad mixture.

          Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, black pepper, and chili powder. Taste and adjust seasoning as desired.

            Combine Everything: Pour the dressing over the salad and gently toss everything together until well combined. Be careful not to mash the avocado too much.

              Serve: Transfer the salad to a serving bowl or platter. Garnish with a little extra cilantro if desired, and enjoy!
