2 ears of fresh corn, husked

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and minced (adjust for spice preference)

1 cup cherry tomatoes, quartered

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tsp ground cumin

Salt and pepper, to taste

12 small tortilla cups (store-bought or homemade)

Optional: avocado cream or guacamole for topping

Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates, turning occasionally. Grill for about 10-12 minutes, or until the kernels are slightly charred and tender. Remove from the grill and let cool.

    Prepare the Salsa: Once the corn is cool enough to handle, use a sharp knife to carefully cut the kernels off the cob. In a mixing bowl, combine the grilled corn kernels, diced red bell pepper, chopped red onion, minced jalapeño, quartered cherry tomatoes, and chopped cilantro.

      Season the Salsa: Squeeze the juice of 2 limes over the mixture. Add ground cumin, salt, and pepper to taste. Toss everything together gently to combine. Allow the salsa to sit for at least 15 minutes to let the flavors meld.

        Assemble the Cups: If using store-bought tortilla cups, arrange them on a serving platter. Spoon the grilled corn salsa generously into each cup. If you'd like, add a dollop of avocado cream or guacamole on top for extra creaminess.
