Grilled Chicken with Street Corn Sauce

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Street Corn Sauce:

2 cups fresh corn kernels (about 4 ears of corn)

1/4 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled cotija cheese

1 teaspoon smoked paprika

1 tablespoon lime juice

1/4 cup chopped fresh cilantro

Salt to taste

Marinate the Chicken: In a large bowl, combine olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper. Add the chicken breasts and toss to coat. Let marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Prepare the Street Corn Sauce: In a medium skillet, heat a little oil over medium-high heat. Add the corn kernels and cook for 5-7 minutes until they start to caramelize and brown slightly. Stir occasionally to ensure even cooking. Once done, remove from heat and let cool slightly.

      Blend the Sauce: In a mixing bowl, combine the cooled corn, mayonnaise, sour cream, cotija cheese, smoked paprika, lime juice, cilantro, and a pinch of salt. Mix until well combined, and adjust seasoning to taste. Set aside.

        Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.

          Serve: Once grilled, let the chicken rest for a few minutes. Slice the chicken breasts and place them on serving plates. Generously drizzle the street corn sauce over the top of the chicken. Garnish with extra cilantro and lime wedges if desired.
