For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Juice of 1 lemon

For the Peach Salsa:

2 ripe peaches, diced

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

Salt to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, pepper, and lemon juice.

      - Add the chicken breasts to the bowl, making sure they are well-coated in the marinade.

        - Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

          Prepare the Peach Salsa:

            - In a medium bowl, mix together the diced peaches, red onion, cilantro, jalapeño (if using), lime juice, and salt.

              - Stir well to combine and allow it to sit for at least 15 minutes to let the flavors meld.

                Grill the Chicken:

                  - Preheat your grill to medium-high heat.

                    - Remove the chicken from the marinade and discard the marinade.

                      - Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

                        - Once cooked, remove the chicken from the grill and let it rest for 5 minutes.

                          Serve:

                            - Slice the grilled chicken and serve it topped with a generous portion of peach salsa.
