Grilled Chicken Quesadillas

2 large boneless, skinless chicken breasts

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

4 medium flour tortillas

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 red bell pepper, sliced

1 small onion, sliced

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Salsa (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Rub this mixture evenly over the chicken breasts. Let them marinate for at least 20 minutes (or up to 2 hours in the fridge for more flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Drizzle olive oil on the grill grates. Once hot, add the marinated chicken breasts and grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Once done, remove from heat and let it rest for a few minutes before slicing it into thin strips.

      Sauté the Veggies: In a skillet, add a drizzle of olive oil over medium heat. Sauté the sliced red bell pepper and onion for about 5-6 minutes or until soft. Remove from heat and set aside.

        Assemble the Quesadillas: Place one tortilla on a clean surface. Layer one-fourth of the grilled chicken, sautéed vegetables, and a mix of Monterey Jack and cheddar cheese on one half of the tortilla. Fold the other half over to create a semi-circle.

          Grill the Quesadillas: In the same skillet or on the grill, lightly grease with olive oil. Cook the quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat with remaining tortillas.

            Serve: Once cooked, cut the quesadillas into wedges and garnish with fresh cilantro. Serve with sour cream and salsa on the side for dipping.
