Grilled Chicken & Peach Skewers

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

1/4 cup olive oil

2 tbsp honey

2 tbsp balsamic vinegar

2 cloves garlic, minced

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

Skewers (if using wooden skewers, soak in water for at least 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, paprika, salt, and pepper. Add the cubed chicken and mix until well coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Prepare the Skewers: While the chicken is marinating, prepare your skewers. If using wooden skewers, ensure they are soaked to prevent burning on the grill.

      Assemble the Skewers: Once the chicken has marinated, thread the chicken, peach wedges, bell pepper pieces, and red onion wedges onto the skewers, alternating ingredients to create a colorful presentation.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C).

          Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked (internal temperature should reach 165°F/75°C) and has nice grill marks. The peaches should also be softened with a bit of char.

            Serve: Once cooked, remove from the grill and let them rest for a few minutes. Serve warm, drizzled with any remaining marinade (that’s been cooked) or a sprinkle of fresh herbs if desired.
