Grilled Chicken & Corn Caesar Salad

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 cups Romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or canned, drained)

½ cup freshly grated Parmesan cheese

¼ cup Caesar dressing (store-bought or homemade)

¼ cup croutons (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Rub this mixture all over the chicken breasts.

    Grill the Chicken: Preheat the grill to medium-high heat. Once hot, add the chicken breasts and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let them rest for 5 minutes.

      Cook the Corn: If using fresh corn, you can either grill the corn on the cob for about 10 minutes until tender and slightly charred, or you can use canned corn, simply drain and rinse it before adding to the salad.

        Combine the Salad Ingredients: In a large salad bowl, add chopped Romaine lettuce, halved cherry tomatoes, corn, and half of the Parmesan cheese. Toss to combine.

          Slice the Chicken: After the chicken has rested, slice it into strips and add it on top of the salad mixture.

            Dress the Salad: Drizzle Caesar dressing over the salad. Toss gently to ensure everything is well coated.

              Serve: Sprinkle the remaining Parmesan cheese, croutons (if using), and freshly chopped parsley on top. Serve immediately!
