Once your chicken has finished grilling, it’s crucial to let it rest. This step is vital for achieving juicy meat, as it allows the juices to redistribute throughout the chicken. If you cut into it immediately, the juices will run out, leaving you with dry chicken. Ideally, let the chicken rest for about 5 to 10 minutes on a cutting board, covered loosely with aluminum foil. This simple yet essential technique enhances the overall flavor and texture of your Grilled Chicken Cobb Salad.

Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

6 cups mixed salad greens (romaine, arugula, and spinach)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 ripe avocado, diced

4 slices crispy bacon, chopped

1 cup crumbled blue cheese

¼ cup green onions, sliced

½ cup balsamic vinaigrette dressing (store-bought or homemade)

Instructions

Marinate the Chicken: In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, salt, and pepper. Coat the chicken breasts with this mixture, cover, and allow them to marinate in the refrigerator for at least 30 minutes.

Grill the Chicken: Preheat your grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let them rest for 5 minutes before slicing into strips.

Prepare the Salad Base: While the chicken is resting, in a large bowl, combine the mixed salad greens, cherry tomatoes, corn, diced avocado, and chopped bacon. Toss gently to mix all the ingredients together.

Assemble the Salad: Arrange the salad mixture on a large platter or individual bowls. Layer the grilled chicken strips on top of the salad, followed by crumbled blue cheese and sliced green onions.

Dress the Salad: Drizzle the balsamic vinaigrette over the assembled salad just before serving. Toss lightly if desired or serve with the dressing on the side for guests to add as they prefer.

Serve and Enjoy: Serve immediately, and enjoy the fresh flavors and textures of your Grilled Chicken Cobb Salad!
