4 large whole wheat tortillas

1 cup black beans, rinsed and drained

1 cup cooked corn kernels (fresh or canned)

1 cup diced bell peppers (mix of red, yellow, and green)

1/2 cup finely chopped red onion

1 ripe avocado, mashed

1/2 cup Greek yogurt (or dairy-free alternative)

2 tablespoons freshly squeezed lime juice

2 tablespoons chopped fresh cilantro

2–3 green chilies, finely chopped (adjust according to spice preference)

Salt and pepper to taste

Optional: 1 cup shredded lettuce or spinach for added crunch

Instructions
 

Prepare the Filling: In a medium bowl, combine the black beans, corn, diced bell peppers, red onion, chopped green chilies, and cilantro. Mix well. Add salt and pepper to taste. Set aside.

    Make the Avocado Spread: In another bowl, mash the ripe avocado with lime juice until smooth. Stir in Greek yogurt until well combined. Add salt to taste.

      Assemble the Wraps: Lay out a tortilla on a clean surface. Spread a generous layer of the avocado mixture over the entire surface of the tortilla.

        Add the Filling: Spoon a portion of the veggie filling onto the center of the tortilla. If you're using lettuce or spinach, add a handful over the filling for extra crunch.

          Wrap It Up: Fold the sides of the tortilla inwards, then roll from the bottom up snugly to encase the filling completely. Repeat with the remaining tortillas and fillings.

            Slice and Serve: Cut each wrap in half diagonally. You can secure them with a toothpick or wrap them in parchment paper for easier handling, especially for school lunches.
