Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buttermilk

2 large eggs

1/4 cup honey

1/4 cup melted butter

1 cup corn kernels (fresh or frozen)

1 cup diced green chilies (canned or roasted)

1 cup shredded sharp cheddar cheese

Optional: sliced avocado, arugula, or cilantro for topping

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.

Mix dry ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and black pepper. Whisk until well combined.

Prepare wet ingredients: In another bowl, whisk together the buttermilk, eggs, honey, and melted butter. Mix until smooth and fully combined.

Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; it’s okay if a few lumps remain.

Add extras: Fold in the corn kernels, diced green chilies, and shredded cheddar cheese, mixing until evenly distributed.

Fill muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake: Bake in the preheated oven for 15-20 minutes or until the tops are golden and a toothpick inserted in the center comes out clean.

Cool: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Assemble sliders: Once the muffins are cooled, slice them in half horizontally. Fill each muffin half with your choice of toppings, such as sliced avocado, fresh arugula, or chopped cilantro for an extra burst of flavor.

Serve: Enjoy your Green Chili Cornbread Muffin Sliders warm or at room temperature as a delightful appetizer or snack!
