2 cups fresh or frozen sweet corn kernels

1 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/4 cup milk

1 teaspoon baking powder

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional, for a bit of warmth)

1/4 cup finely chopped green onions

1/4 cup grated cheese (cheddar or mozzarella works well)

Oil for frying (vegetable or canola)

Prepare the corn: If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw and drain any excess water.

    Mix the dry ingredients: In a large bowl, combine the all-purpose flour, cornmeal, baking powder, sugar, salt, black pepper, and paprika. Mix well to ensure the baking powder is evenly distributed.

      Combine the wet ingredients: In a separate bowl, whisk together the eggs and milk until well blended.

        Combine the mixtures: Pour the egg mixture into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. Gently fold in the sweet corn, green onions, and cheese until evenly distributed.

          Heat the oil: In a large skillet, add enough oil (about 1/4 inch high) to cover the bottom. Heat over medium heat until the oil is shimmering but not smoking.

            Fry the fritter cakes: Using a 1/4 cup measuring cup, scoop the batter and gently drop it into the hot oil. Flatten each scoop slightly to form a cake shape. Fry a few at a time, being careful not to overcrowd the pan. Cook for about 3-4 minutes per side, or until golden brown and crisp.

              Drain and serve: Remove the fritter cakes from the skillet and drain on paper towels to absorb excess oil. Serve warm, garnished with additional green onions or a dollop of sour cream if desired.
