4 large bell peppers (any color)

2 cups cooked macaroni pasta

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup milk

2 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and black pepper to taste

½ cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Wash the bell peppers, then cut the tops off and remove the seeds and membranes. Place them upright in a baking dish.

      Cook the Cheese Sauce: In a medium saucepan, melt butter over medium heat. Stir in the flour and cook for an additional minute to form a roux. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook until the sauce thickens (about 3-4 minutes).

        Add Spices and Cheese: Once the sauce has thickened, stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Remove from heat and gradually add in the sharp cheddar and mozzarella cheese, stirring until melted and smooth.

          Mix with Pasta: In a large bowl, combine the cooked macaroni pasta and cheese sauce, mixing well to ensure all the pasta is coated.

            Stuff the Peppers: Carefully spoon the mac and cheese mixture into each bell pepper, packing it tightly.
