Garlic Parmesan Hasselback Potatoes

4 medium-sized Russet potatoes

1/2 cup unsalted butter (1 stick), melted

4 cloves garlic, minced

1 cup grated Parmesan cheese

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a kick)

Fresh parsley, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash and dry the Russet potatoes thoroughly. To create the Hasselback effect, place each potato on a cutting board. Using two chopsticks or wooden spoons, place them on either side of the potato as a guide to prevent cutting all the way through. Slice the potato into thin, even slices, about 1/8 inch apart, making sure to stop before reaching the bottom.

      Make Garlic Butter: In a small bowl, combine melted butter, minced garlic, rosemary, salt, black pepper, and red pepper flakes (if using). Mix well to combine.

        Spoon Over the Potatoes: Place the potatoes on a baking tray lined with parchment paper. Using a brush or a spoon, generously drizzle the garlic butter mixture over the potatoes, ensuring the mixture seeps into the cuts.

          Roast the Potatoes: Bake in the preheated oven for about 45-55 minutes, or until the potatoes are tender and the edges are golden brown, basting with leftover garlic butter halfway through.

            Add Parmesan: Remove the potatoes from the oven and sprinkle the grated Parmesan cheese evenly over the top. Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley and serve with sour cream on the side if desired.
