Garlic Lime Shrimp Lettuce Wraps

1 lb large shrimp, peeled and deveined

3 cloves garlic, minced

2 tablespoons olive oil

Juice and zest of 2 limes

1 teaspoon honey (or agave syrup)

1 teaspoon chili powder

Salt and pepper to taste

1 head butter lettuce (or romaine lettuce), leaves separated

1 avocado, sliced

1 cup shredded carrots

1 small cucumber, julienned

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp, minced garlic, olive oil, lime juice and zest, honey, chili powder, salt, and pepper. Toss to coat the shrimp evenly. Cover the bowl and let it marinate in the refrigerator for at least 15-30 minutes for the flavors to meld.

    Cook the Shrimp: In a large skillet over medium-high heat, add marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp are opaque and pink. Remove from heat.

      Prepare the Lettuce Wraps: While the shrimp are cooking, prepare the lettuce wraps. Rinse the lettuce leaves under cold water and pat dry gently with a towel. Lay them out on a serving platter.

        Assemble the Wraps: To each lettuce leaf, add a few pieces of the cooked shrimp, a few slices of avocado, a sprinkle of shredded carrots, and a couple of pieces of julienned cucumber. Garnish with fresh cilantro.

          Serve: Drizzle additional lime juice over the top if desired, and serve with lime wedges on the side for extra zest.
