1 lb medium shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon chili powder

½ teaspoon paprika

Salt and pepper to taste

1 medium avocado, diced

1 medium cucumber, thinly sliced

1 red bell pepper, julienned

½ cup fresh cilantro, roughly chopped

1 head butter lettuce or romaine, leaves separated

Optional: hot sauce for drizzling

Marinate the Shrimp: In a mixing bowl, combine the shrimp with 2 tablespoons of olive oil, minced garlic, lime zest, lime juice, chili powder, paprika, salt, and pepper. Toss well to ensure the shrimp are evenly coated. Let it marinate for at least 15 minutes to absorb the flavors.

    Cook the Shrimp: Heat a skillet over medium-high heat and add the remaining tablespoon of olive oil. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and set aside.
