1 lb (450g) large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup fresh corn (canned or frozen, thawed)

1 cup diced ripe avocado

1 cup diced tomatoes

1 cup chopped fresh cilantro

1 head of butter or romaine lettuce, leaves separated

Lime wedges, for serving

Marinate the Shrimp: In a large bowl, combine olive oil, minced garlic, lime zest, lime juice, cumin, chili powder, salt, and black pepper. Add the shrimp and toss to coat. Let marinate for at least 15 minutes.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Be careful not to overcook.
