Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 limes

1 tablespoon honey

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

8 large romaine lettuce leaves

1 cup diced avocado

1 cup diced tomatoes

½ cup chopped fresh cilantro

Lime wedges, for serving

Instructions

Marinate the Shrimp: In a medium bowl, combine olive oil, minced garlic, lime zest, lime juice, honey, smoked paprika, cumin, salt, and pepper. Add the shrimp and toss until well-coated. Let it marinate for at least 15 minutes.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

Prepare the Lettuce Wraps: While the shrimp is cooking, wash and dry the romaine lettuce leaves. Place them on a serving platter.

Assemble the Wraps: Begin by placing a few shrimp in the center of each lettuce leaf. Top with diced avocado, tomatoes, and a sprinkle of fresh cilantro.

Serve: Squeeze fresh lime juice over the assembled wraps, add lime wedges on the side, and serve immediately while the shrimp are warm.
