Garlic Lime Shrimp Lettuce Wraps

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 lime, zested and juiced

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

1 head of Butter lettuce (or Romaine), leaves separated and washed

1 avocado, diced

1 medium carrot, julienned

1 small cucumber, thinly sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Shrimp Marinade: In a large mixing bowl, combine the olive oil, minced garlic, lime zest, lime juice, smoked paprika, chili powder, salt, and pepper. Mix well to form a marinade.

    Marinate the Shrimp: Add the shrimp to the marinade and toss until well coated. Let the shrimp marinate for at least 15-20 minutes at room temperature (or refrigerate for up to an hour for more flavor).

      Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp to the skillet in a single layer (you may need to do this in batches). Sauté for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.
