1 cup quinoa

2 cups vegetable or chicken broth

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon fresh lemon juice

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Rinse Quinoa: Begin by rinsing the quinoa under cold water in a fine-mesh sieve to remove any bitterness. Drain well.

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and broth. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15 minutes, or until all the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork.

      Sauté Shrimp: While the quinoa is cooking, heat 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
