Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup plain Greek yogurt (or your favorite non-dairy alternative)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup milk (dairy or plant-based)

A pinch of salt

Optional toppings: chopped nuts, shredded coconut, or mini chocolate chips

Instructions

Prepare the Strawberries: In a blender or food processor, combine the sliced strawberries and honey (or maple syrup). Blend until smooth, leaving some small chunks if you prefer texture.

Mix the Yogurt Base: In a mixing bowl, combine Greek yogurt, vanilla extract, rolled oats, milk, and a pinch of salt. Stir until the mixture is well combined and the oats are evenly distributed.

Layer the Ingredients: Take your popsicle molds and start layering. Add a spoonful of the yogurt mixture at the bottom, followed by a layer of the strawberry mixture. Alternate layers until the molds are filled, finishing with the strawberry mix on top.

Insert Sticks: If your molds have a built-in stick, insert them now. If not, you can freeze the pops for about 45 minutes first, then insert wooden sticks into the pops to help them hold shape.

Freeze: Place the molds in the freezer and let them freeze for at least 4 hours or until completely firm.

Unmold the Pops: To enjoy, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to release the pops.

Add Toppings (Optional): If desired, before serving, roll the pops in chopped nuts or shredded coconut for an added crunch and flavor.

Prep Time, Total Time, Servings: 15 minutes | 4 hours | 8 pops
