2 cups fresh strawberries, hulled and halved

1/2 cup granulated sugar (adjust based on sweetness preference)

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup plain or vanilla Greek yogurt

1 cup coconut water (or regular water)

1 teaspoon vanilla extract

Lemon zest (from 1 lemon, for garnish)

Fresh mint leaves (for garnish)

Optional: 1-2 tablespoons honey (for additional sweetness)

Prepare the Strawberries: In a medium bowl, combine the hulled and halved strawberries with half of the granulated sugar. Let them sit for about 15 minutes to macerate, releasing their juices. If desired, mash them lightly with a fork for a chunky texture.
