2 cups pumpkin puree (canned or fresh)

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon pumpkin pie spice

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup crushed graham crackers (for topping)

Optional: Cinnamon sugar for sprinkling

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a donut pan or use a silicone donut mold.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Whisk until smooth and well combined.

      Combine Dry Ingredients: In another bowl, sift together the flour, pumpkin pie spice, baking powder, baking soda, and salt.

        Blend Mixtures: Gradually add the dry ingredients to the wet mixture. Mix just until incorporated, being careful not to overmix. The batter should be thick but pourable.

          Fill Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full to allow for rising.

            Bake: Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

              Cool Down: Once baked, remove the donuts from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.

                Prepare for Freezing: Once cooled, you can top each donut with a dollop of Greek yogurt, sprinkle with crushed graham crackers, and optional cinnamon sugar for added sweetness.

                  Freeze: Place the decorated donuts in the freezer for at least 2 hours or until they are firm.
