Ingredients

1 cup plain Greek yogurt

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ cup shelled pistachios, coarsely chopped

10 Medjool dates, pitted and roughly chopped

¼ cup unsweetened shredded coconut (optional)

A pinch of sea salt

Instructions

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Incorporate the Mix-ins: Fold in the chopped pistachios, chopped dates, and shredded coconut (if using). Sprinkle in a pinch of sea salt to enhance the flavor. Mix gently to ensure an even distribution of ingredients.

Scoop and Shape: Line a baking sheet with parchment paper. Using a spoon or a cookie scoop, drop small mounds of the yogurt mixture onto the prepared baking sheet. Flatten them slightly with the back of the spoon to create clusters.

Freeze: Place the baking sheet in the freezer and let it sit for about 2-3 hours or until the clusters are completely frozen.

Serve and Store: Once frozen, remove the clusters from the baking sheet and transfer them to an airtight container. Store them in the freezer for up to a month. Enjoy them straight from the freezer!
