2 cups Greek yogurt (plain or vanilla flavored)

1/2 cup pistachio nuts, shelled and finely chopped

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup granola (for extra crunch)

1/4 cup dark chocolate chips (optional for drizzle)

Instructions
 

Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Stir until the mixture is smooth and well-blended.

    Prepare the Pistachios: Finely chop the pistachio nuts; reserve a tablespoon for garnishing later.

      Add the Crunch: Fold the chopped pistachios and granola into the yogurt mixture until evenly distributed.

        Mold the Coins: Using a silicone mold or a muffin tin lined with cupcake liners, scoop about 2 tablespoons of the yogurt mixture into each cavity. Gently flatten the top with the back of a spoon to create an even surface.

          Freeze the Coins: Place the molds in the freezer and freeze for at least 4 hours, or until the coins are solid.
