Ingredients

2 cups rolled oats

1 cup Greek yogurt (plain or vanilla)

1 cup milk (dairy or non-dairy)

1/2 cup honey or maple syrup

1/4 cup almond butter (or any nut butter)

1 tsp vanilla extract

1/4 tsp salt

1/2 cup brewed espresso or strong coffee (cooled)

1/2 cup dark chocolate chips (optional)

Fresh fruit for topping (like berries or banana slices)

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, Greek yogurt, milk, honey (or maple syrup), almond butter, vanilla extract, and salt. Stir until well combined and creamy.

Add Coffee: Pour in the cooled espresso or strong coffee and mix until fully incorporated. The mixture should have a sticky consistency.

Add Chocolate: If using dark chocolate chips, fold them into the mixture until evenly distributed throughout.

Line the Pan: Prepare a 9x9 inch square baking pan by lining it with parchment paper, leaving some overhang on the sides for easy removal later.

Spread the Mixture: Spoon the oat mixture into the lined baking pan, spreading it evenly to create a smooth surface. Press down firmly to pack it tightly.

Freeze: Cover the pan with plastic wrap or aluminum foil and place it in the freezer. Let it freeze for at least 4 hours or until solid.

Cut into Bars: Once frozen, lift the mixture out of the pan using the parchment overhang. Place it on a cutting board and cut into bars of desired size.

Serve and Top: Serve the bars cold as a refreshing treat. Top with fresh fruit before enjoying, if desired.

Store: Place any leftover bars in an airtight container, separated by parchment paper, and keep them in the freezer for up to 2 weeks.
