At the heart of Nutty Bliss Frozen Yogurt Wedges is Greek yogurt, known for its rich and creamy texture. Unlike regular yogurt, Greek yogurt undergoes a straining process that removes excess liquid, resulting in a thicker consistency. This not only enhances its creaminess but also boosts its nutritional profile. Greek yogurt is an excellent source of protein, which is essential for muscle repair and growth. A single serving can provide up to 20 grams of protein, making it a satiating option for a snack or dessert.

Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup almond butter or peanut butter

1/2 cup rolled oats

1/2 cup mixed nuts (such as walnuts, almonds, and pecans), roughly chopped

1/4 cup sunflower seeds

1/4 cup dried fruits (raisins, cranberries, or apricots)

1/4 cup mini chocolate chips or dark chocolate chunks (optional)

A pinch of sea salt

Instructions

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well mixed and smooth.

Blend in the Nut Butter: Add the almond butter (or peanut butter) to the yogurt mixture and mix until fully incorporated and creamy.

Combine the Dry Ingredients: In a separate bowl, mix together the rolled oats, chopped mixed nuts, sunflower seeds, dried fruits, mini chocolate chips (if using), and a pinch of sea salt.

Fold into the Yogurt: Gently fold the dry mixture into the yogurt mixture, ensuring everything is evenly distributed.

Line the Pan: Line an 8x8 inch square baking dish with parchment paper, allowing some edges to overhang for easy removal later.

Pour and Spread: Pour the yogurt-nut mixture into the lined baking dish. Spread it out evenly using a spatula, pressing it down gently to ensure it’s packed tightly.

Freeze: Place the baking dish in the freezer and let it freeze for at least 4-6 hours, or until fully set.

Cut and Serve: Once frozen, remove the mixture from the baking dish using the overhanging parchment paper. Place it on a cutting board and cut into wedges or bars.

Store: Enjoy immediately or store the wedges in an airtight container in the freezer for a refreshing snack anytime!
