2 cups Greek yogurt (plain or vanilla)

1/2 cup pure maple syrup

1/2 teaspoon vanilla extract

1 cup walnuts, chopped

1/4 teaspoon cinnamon

Prep the Nuts: Begin by toasting the chopped walnuts. In a dry skillet over medium heat, add the walnuts and toast for about 5-7 minutes, stirring occasionally until they are golden brown and aromatic. Remove from heat and set aside.

    Mix Yogurt Base: In a large mixing bowl, combine the Greek yogurt, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Stir until well blended and creamy.

      Add Walnuts: Gently fold the toasted walnuts into the yogurt mixture, reserving a handful for garnish.

        Shape the Circles: Line a baking sheet with parchment paper. Using a silicone mold or a cookie cutter, scoop the yogurt mixture into the desired shape—about a tablespoon for each circle. Press down to make sure they hold their shape. If using a cookie cutter, place it on the baking sheet and fill with the mixture, then remove the cutter carefully.

          Freeze: Place the baking sheet in the freezer and let the yogurt circles freeze for at least 4 hours or until solid.

            Serve: Once frozen, carefully peel off the parchment paper. If desired, drizzle chocolate over the tops and sprinkle with reserved walnuts for an extra crunch.
