To achieve the perfect frozen yogurt filling for your granola sandwich rounds, start by selecting a high-quality yogurt. Greek yogurt is an excellent choice due to its creamy texture and higher protein content, but you can also use regular yogurt if you prefer a lighter version. In a medium mixing bowl, scoop out 2 cups of your chosen yogurt. Next, add 2 tablespoons of honey or maple syrup for sweetness, adjusting according to your taste preferences. If you'd like a hint of flavor, consider incorporating a teaspoon of vanilla extract or a sprinkle of cinnamon.

Ingredients

2 cups of Greek yogurt (plain or flavored)

1/2 cup of honey or maple syrup

1 teaspoon of vanilla extract

1 1/2 cups of granola (your choice, preferably with nuts and dried fruit)

1/2 cup of fresh berries (blueberries, raspberries, or sliced strawberries)

Pinch of salt

Optional toppings: shredded coconut, mini chocolate chips, or crushed nuts

Instructions

Prepare the Yogurt Mixture: In a medium-sized bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and pinch of salt. Mix thoroughly until smooth and well combined.

Prep the Granola: In a separate bowl, add the granola and mix in any additional toppings you might like. This could be shredded coconut, mini chocolate chips, or crushed nuts for added flavor and texture.

      Form the Sandwiches:

        - Line a baking sheet with parchment paper.

          - Using a 1/4 cup measuring cup, scoop a portion of the yogurt mixture and place it on the parchment paper, forming a round shape (about 3 inches in diameter).

            - Gently press a small handful of granola onto the top of the yogurt round, ensuring it sticks well.

              - If desired, add a few fresh berries on top for flavor and a pop of color.

Add a Second Layer: Repeat the process to form another round of yogurt, then place it on top of the granola-topped yogurt so that it resembles a sandwich. The granola should be sandwiched between two yogurt rounds.

Freeze: Once all the rounds are assembled, place the baking sheet in the freezer and let them freeze for at least 4 hours, or until completely solid.

Serve: When ready to serve, allow the yogurt sandwich rounds to sit at room temperature for a few minutes before enjoying, to slightly soften.

Store Remaining: Store any leftovers in an airtight container in the freezer for up to 2 weeks.
