Ingredients

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 tablespoon instant coffee granules

1/2 teaspoon vanilla extract

1/2 cup granola (your choice)

1/4 cup dark chocolate chips (optional)

A pinch of sea salt

Instructions

In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), instant coffee granules, vanilla extract, and a pinch of sea salt. Whisk until well combined and smooth.

Line a baking sheet with parchment paper.

Pour the yogurt mixture into a silicone ice cube tray or dinosaur-shaped molds. Fill each cavity about three-quarters full.

Sprinkle a layer of granola and chocolate chips (if using) on top of each yogurt-filled cavity. Gently press down to ensure they adhere to the yogurt.

Transfer the tray to the freezer and allow the bites to freeze for at least 4 hours, or until completely solid.

Once frozen, carefully pop the yogurt bites out of the molds. If using a silicone tray, this should be easy; if using an ice cube tray, you may need to run warm water on the bottom to release them.

Serve immediately or store the bites in an airtight container in the freezer for up to 2 weeks. Enjoy these delightful treats whenever you crave a sweet, coffee-infused snack!
