1 cup Greek yogurt

1 cup canned coconut milk (full-fat for creaminess)

1/2 cup honey or maple syrup

Zest of 2 lemons

Juice of 2 lemons

1 teaspoon vanilla extract

1 cup unsweetened shredded coconut

1/2 cup graham cracker crumbs

2 tablespoons melted coconut oil

Pinch of salt

Prepare the crust: In a bowl, combine the graham cracker crumbs, melted coconut oil, and a pinch of salt. Mix until well combined. Press this mixture into the bottom of a lined 8x8-inch baking dish to form an even layer. Set aside.

    Mixed yogurt filling: In a large mixing bowl, whisk together the Greek yogurt, coconut milk, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until the mixture is smooth and creamy.

      Incorporate coconut: Gently fold the shredded coconut into the yogurt mixture until evenly distributed.

        Pour the filling: Pour the yogurt-coconut mixture over the prepared crust in the baking dish. Spread it evenly with a spatula.

          Freeze: Cover the dish with plastic wrap and place it in the freezer for about 4-6 hours, or until completely frozen.
