Ingredients

2 cups plain Greek yogurt

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon coconut extract

1 cup shredded unsweetened coconut

1 cup dark chocolate chips

1 tablespoon coconut oil

Pinch of sea salt

Optional toppings: crushed nuts, cacao nibs, or extra shredded coconut

Instructions

Mix Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and coconut extract. Whisk until the mixture is smooth and creamy.

Prepare the Ring Molds: Lightly grease a silicone donut mold or use a parchment-lined baking sheet to form ring shapes.

Fill the Molds: Spoon the yogurt mixture into the molds, filling them about 3/4 of the way full. Use a spatula to smooth the tops.

Add Coconut: Sprinkle shredded coconut evenly over the top of the yogurt mixtures in the molds, pressing it down gently so it adheres.

Freeze: Place the molds in the freezer for about 4-6 hours, or until completely frozen.

Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

Dip the Rings: Once the yogurt rings are frozen solid, carefully remove them from the molds. Dip each ring into the melted chocolate, allowing any excess to drip off. Place the dipped rings on a parchment-lined tray.

Add Salt & Toppings: While the chocolate is still warm, sprinkle a pinch of sea salt over each ring and any optional toppings you desire (crushed nuts, cacao nibs, or more shredded coconut).

Final Freeze: Return the chocolate-coated yogurt rings to the freezer for about 30 minutes to set the chocolate completely.

Serve: Enjoy your Frozen Yogurt Choco Coconut Rings straight from the freezer! Store any leftovers in an airtight container in the freezer for up to a month.
