Frozen Yogurt Blueberry Muffin Bites

1 cup fresh or frozen blueberries

2 cups plain Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

2 cups mini muffin mix (store-bought or homemade)

1/4 cup almond flour (optional, for added texture)

1/4 cup chopped nuts (walnuts or pecans work great, optional)

1/4 cup mini chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin pan with paper liners or lightly grease it.

    Prepare the Muffin Batter: In a mixing bowl, combine the mini muffin mix, almond flour (if using), and cinnamon. Stir well to incorporate all the dry ingredients.

      Make the Yogurt Mixture: In a separate bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth and well combined.

        Combine the Mixtures: Gently fold the blueberries into the muffin batter. If desired, also add in the chopped nuts and mini chocolate chips.

          Fill the Muffin Pan: Spoon the muffin batter into each compartment of the mini muffin pan, filling them about 2/3 of the way full. Top each muffin with a dollop of the yogurt mixture, using a spoon or piping bag for precision.

            Bake the Muffins: Place the muffin pan in the preheated oven and bake for about 12-15 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

              Cool and Freeze: Once baked, allow the muffin bites to cool completely in the pan for 10 minutes, then transfer them to a wire rack to cool completely. After they are cooled, place the muffin bites in the freezer for at least 2 hours until firm.

                Serve: Once frozen, remove the muffin bites from the freezer and enjoy them straight away, or store them in an airtight container in the freezer for up to a month. Perfect as a refreshing snack or dessert!
