Ingredients

3 ripe peaches, pitted and sliced

1 cup Greek yogurt (plain or vanilla)

1 tablespoon honey (adjust to taste)

1 teaspoon pure vanilla bean paste (or extract)

1 tablespoon fresh lemon juice

1/4 teaspoon sea salt

1/2 cup granola or chopped nuts (optional, for topping)

Instructions

Prepare the Peaches: Start by washing the peaches thoroughly. Slice them in half, remove the pit, and cut them into wedges or rounds about 1-inch thick.

Make the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey, vanilla bean paste, lemon juice, and sea salt. Stir until all ingredients are well mixed and smooth. Adjust sweetness to your liking by adding more honey, if desired.

Coat the Peaches: Dip each peach slice into the yogurt mixture, ensuring they are generously coated. You can also use a spatula to spread the yogurt mixture evenly on the peach slices if preferred.

Transfer to Baking Sheet: Line a baking sheet with parchment paper. Place the coated peach slices on the sheet in a single layer, ensuring they are not touching each other.

Add Toppings: If you're using granola or nuts, sprinkle them over the yogurt-coated peach slices for added crunch and texture.

Freeze: Place the baking sheet in the freezer and freeze the peach bites for about 2-4 hours, or until the yogurt is firm and the peaches are completely frozen.

Serve: Once frozen, remove the peach bites from the freezer and allow them to sit at room temperature for a minute to soften slightly before serving. Enjoy these refreshing treats as a healthy snack or dessert!
