2 cups fresh strawberries, hulled and sliced

1/4 cup sugar (divided)

1 cup heavy whipping cream

1 cup Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

Pinch of salt

Prepare the Strawberries: In a medium bowl, mix the sliced strawberries with 2 tablespoons of sugar. Set aside for about 15 minutes to macerate, allowing the juices to develop.

    Make the Base: In a separate bowl, combine the graham cracker crumbs, melted butter, and a pinch of salt. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9x9-inch baking dish to form a crust.

      Whip the Cream: In a large mixing bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Gradually add the remaining sugar (2 tablespoons), Greek yogurt, vanilla extract, and lemon juice. Continue to beat until fully combined and slightly thickened.

        Layer the Ingredients: Spread half of the whipped cream mixture over the graham cracker crust evenly. Then, layer the macerated strawberries over this base. Spoon the remaining whipped cream mixture on top and spread it out evenly.

          Freeze: Cover the baking dish with plastic wrap and freeze for at least 4 hours, or until set.

            Serve: Once frozen, remove from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly for easier cutting. Use a sharp knife to slice into bars and serve immediately. Enjoy the frosty delights!
