1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

1 cup cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups frozen strawberries, thawed and diced

¼ cup strawberry jam (optional)

Fresh strawberries for garnish (optional)

Instructions
 

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a silicon mini muffin tray or a standard muffin tray lined with paper liners. Place the tray in the freezer while you prepare the filling.

    Make the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, continuing to beat until fully combined.

      Whip the cream: In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the cream.

        Add strawberries: Stir in the diced strawberries until evenly distributed throughout the cheesecake mixture. For an extra strawberry burst, you can also fold in the strawberry jam at this stage.

          Fill the crusts: Remove the graham cracker crusts from the freezer. Carefully spoon the cheesecake filling into each crust, filling them to the top. Use a spatula to smooth the tops if needed.

            Freeze the bites: Place the filled tray back in the freezer and allow it to set for at least 4 hours or until the cheesecakes are firm.

              Serve: Once frozen, carefully pop the cheesecake bites out of the tray. If desired, garnish with fresh strawberries. Enjoy straight from the freezer for a refreshing treat!
