Ingredients

2 ½ cups fresh or frozen strawberries, hulled and sliced

1 cup Greek yogurt (plain or vanilla)

1/3 cup honey or maple syrup (adjust for sweetness)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Pinch of salt

1/2 cup granola (optional, for topping)

Instructions

Prepare the Strawberries: If using fresh strawberries, wash and hull them. If using frozen, allow them to thaw slightly for easier blending.

Blend the Mixture: In a blender or food processor, combine the strawberries, Greek yogurt, honey, lemon juice, vanilla extract, and a pinch of salt. Blend until smooth. You can leave some chunks of strawberries if you prefer a textured bar.

Taste and Adjust: Taste the mixture and adjust the sweetness if needed, adding more honey or maple syrup.

Prepare the Mold: Line an 8x8-inch baking dish or a silicone mold with parchment paper for easy removal.

Pour the Mixture: Pour the blended strawberry mixture evenly into the prepared baking dish, smoothing it out with a spatula.

Add Granola (Optional): If you’re using granola, sprinkle it evenly over the top of the mixture for added crunch.

Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4 hours or until completely solid.

Cut into Bars: Once frozen, remove the dish from the freezer. Let it sit for a few minutes to soften slightly before lifting the mixture out using the parchment paper. Cut into bars or squares using a sharp knife.

Serve and Enjoy: Enjoy your Frozen Strawberry Bars straight from the freezer or allow them to soften for a minute before eating for a creamier texture.
