2 cups fresh or frozen raspberries

1 cup unsweetened shredded coconut

1/2 cup coconut cream (chilled)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: dark chocolate for drizzling

Prepare the Raspberries: If using frozen raspberries, allow them to thaw slightly. Using a fork, gently mash the raspberries in a bowl until they are mostly crushed but still have some chunks for texture.

    Make the Coconut Mixture: In a separate mixing bowl, combine the chilled coconut cream, shredded coconut, honey or maple syrup, vanilla extract, and sea salt. Mix until well combined and creamy.

      Combine the Mixtures: Gently fold the mashed raspberries into the coconut mixture. Be careful not to fully blend the raspberries in; you want to retain some of their chunks for a burst of flavor.

        Form the Bites: Line a mini muffin tin or silicone mold with parchment paper or silicone liners for easy removal. Spoon the raspberry coconut mixture into each mold, filling them to the top. Press down gently to compact the mixture.

          Freeze: Carefully place the filled molds in the freezer and let them freeze for at least 3-4 hours or until completely solid.

            Optional - Chocolate Drizzle: If desired, melt some dark chocolate either in a microwave or double boiler. Once the bites are fully frozen, remove them from the molds, and drizzle the melted chocolate over the top for added decadence.
