Ingredients

2 ripe bananas

1/2 cup creamy peanut butter

1/4 cup Greek yogurt (optional for creaminess)

1 tablespoon honey or maple syrup (optional for sweetness)

1/2 teaspoon vanilla extract

1/4 cup granola or crushed nuts (for coating)

1/4 cup dark chocolate chips (optional for drizzling)

Instructions

Prep the Bananas: Peel the bananas and cut them in half crosswise. Insert a popsicle stick into each banana half, making sure it goes deep enough to support the weight when frozen. Place the banana pops on a baking sheet lined with parchment paper.

Make the Peanut Butter Mixture: In a medium-sized bowl, combine the peanut butter, Greek yogurt (if using), honey or maple syrup, and vanilla extract. Stir well until the mixture is smooth and creamy.

Coat the Banana Pops: Using a small spatula or knife, spread a generous layer of the peanut butter mixture over each banana pop. Ensure they are evenly coated for the best flavor.

Add Coating: Roll each coated banana pop in granola or crushed nuts, pressing gently to adhere. This will add a delightful crunch.

Freeze: Place the coated banana pops back on the parchment-lined baking sheet and freeze for at least 2 hours, or until completely solid.

Optional Chocolate Drizzle: If you’d like to add a chocolate drizzle, melt the dark chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each interval until smooth. Using a fork, drizzle the melted chocolate over the frozen banana pops after they’re fully frozen.

Serve: Remove the banana pops from the freezer and let them sit at room temperature for a couple of minutes before serving. Enjoy your delicious and refreshing Frozen Peanut Butter Banana Pops!
