Ingredients

1 cup rolled oats

½ cup all-purpose flour

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup chocolate chips (or dried fruits for a healthier twist)

½ cup chopped nuts (optional)

Instructions

Mix the Dry Ingredients: In a large bowl, whisk together the rolled oats, all-purpose flour, baking soda, cinnamon, and salt. Set aside.

Cream the Butter and Sugars: In another bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).

Add Wet Ingredients: Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

Fold in Add-ins: Carefully fold in the chocolate chips and chopped nuts (if using) until evenly distributed throughout the dough.

Form the Dough Chunks: Use a cookie scoop or tablespoon to portion out the dough onto a parchment-lined baking sheet. Press each mound slightly to flatten them into chunky discs for even freezing.

Freeze the Dough: Place the baking sheet in the freezer for about 1-2 hours, or until the cookie dough chunks are completely frozen.

Store for Later Use: Transfer the frozen chunks to an airtight container or a zip-top bag. Label with the date, and store in the freezer for up to 3 months.

Bake from Frozen: When you’re ready to bake, preheat your oven to 350°F (175°C). Place the frozen cookie dough chunks on a parchment-lined baking sheet and bake for 10-12 minutes, or until the edges are lightly golden. Let them cool for a few minutes before enjoying!
