2 cups coconut milk (full fat for creaminess)

1 cup pineapple juice (freshly squeezed if possible)

1/2 cup shredded unsweetened coconut

1/4 cup honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1 cup chopped fresh pineapple (for garnish)

Fresh mint leaves (for garnish)

Optional: 1/4 cup chopped macadamia nuts (for added crunch)

Mix the Base: In a large mixing bowl, combine the coconut milk and pineapple juice. Whisk well until fully blended and smooth.
