Ingredients

2 ripe bananas, sliced

1 cup coconut yogurt (dairy-free if desired)

1/2 cup coconut milk (canned or carton)

1 tablespoon honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup shredded unsweetened coconut

A pinch of sea salt

Optional: Slices of fresh fruit or chocolate chips for added texture

Instructions

Blend the Base: In a blender, combine the sliced bananas, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, and sea salt. Blend until smooth and creamy. Taste and adjust sweetness if necessary.

Mix in Coconut: Stir in the shredded coconut using a spatula, ensuring an even distribution throughout the mixture.

Prepare the Molds: If you are using popsicle molds, ensure they are clean and dry. If using paper cups, set them on a baking sheet for stability.

Fill the Molds: Pour the banana-yogurt mix into the molds, leaving a small space at the top for expansion during freezing. If desired, sprinkle in some fresh fruit slices or chocolate chips for added flavor and texture.

Insert Sticks: If using popsicle molds, insert the sticks immediately. If using paper cups, place a popsicle stick in the center of each cup, making sure it stands upright.

Freeze: Place the filled molds or cups in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

Unmold the Pops: Once frozen, run warm water over the outside of the molds for a few seconds to loosen the pops. Gently pull the pops from their molds. If using paper cups, peel away the paper carefully.

Serve and Enjoy: Enjoy your Frozen Coconut Banana Yogurt Pops immediately! You can store leftovers in a sealed container in the freezer.
