Ingredients

2 ripe bananas

1/2 cup creamy peanut butter

1/4 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1 cup crushed peanuts (salted or unsalted, based on preference)

1 cup dark chocolate chips (or milk chocolate chips)

Sea salt (for sprinkling)

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1/2 inch thick rounds. Place the banana slices on a parchment-lined baking sheet.

Make the Caramel Mixture: In a medium bowl, mix the creamy peanut butter and honey (or maple syrup) until smooth. This will serve as the caramel layer of your Snickers bites.

Assemble the Bites: Using a spoon, dollop about 1 teaspoon of the peanut butter mixture onto half of the banana slices. Top these with the remaining banana slices to create little “sandwiches.

Coat with Cocoa: In another bowl, add the unsweetened cocoa powder. Roll each banana sandwich in the cocoa powder until well coated. This will enhance the chocolaty goodness when dipped in chocolate.

Freeze the Banana Sandwiches: Place the assembled banana bites back onto the baking sheet and freeze for about 1-2 hours, or until they are firm.

Melt the Chocolate: Once the banana bites are frozen, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until smooth and melted.

Dunk and Coat: Remove the frozen banana bites from the freezer. Dip each one into the melted chocolate, ensuring they are fully coated. Allow any excess chocolate to drip off.

Add Crushed Peanuts: While the chocolate is still wet, sprinkle the crushed peanuts over the top of each coated banana bite. This adds the signature crunch of a Snickers bar.

Final Freeze: Return the chocolate-dipped bites back to the parchment-lined baking sheet and sprinkle a tiny pinch of sea salt over the top of each bite. Place them back in the freezer for an additional 30 minutes to set the chocolate.

Serve: Enjoy your Frozen Banana Snickers Bites straight from the freezer for a delicious and healthy treat!
