Ingredients

4 ripe bananas

1 cup creamy peanut butter

1 cup Greek yogurt (or dairy-free yogurt)

2 tablespoons honey (or maple syrup for vegan)

1 teaspoon vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (optional)

2 tablespoons coconut oil (optional)

Instructions

Prepare the Banana Mixture: In a blender or food processor, combine the ripe bananas, creamy peanut butter, Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Blend until the mixture is smooth and creamy, scraping down the sides as needed.

Melt the Chocolate (Optional): If you're using the chocolate chips, melt them gently in a microwave or over a double boiler, mixing with coconut oil until smooth and glossy.

Prepare the Ice Pop Molds: If desired, layer the melted chocolate at the bottom of your ice pop molds for added richness. Gently shake the molds to even out the layer.

Fill the Molds: Pour the banana and peanut butter mixture into the ice pop molds, leaving a little space at the top for expansion. If you like, you can also add chunks of banana or swirls of melted chocolate throughout the mixture.

Insert Sticks and Freeze: Insert the ice pop sticks into the molds, ensuring they are centered. Place the molds in the freezer and freeze for at least 4-6 hours or until completely firm.

Unmold and Enjoy: To release the ice pops, run the molds under warm water for a few seconds. Gently pull the pops out and enjoy your delicious Choco-Banana Bliss Ice Pops!
